Adhesion of microorganisms to food processing surfaces and the problems it causes are a matter of strong concern to the food industry. Contaminated food processing surfaces may act as potential sources of transmission of pathogens in food industry, catering and in the domestic environments. Antibiotic resistance in Salmonella Enteritidis isolated from broiler carcasses BJM

Eighty Salmonella Enteritidis strains isolated from broiler carcasses between May 1995 and April 1996 in the State of Rio Grande do Sul, Brazil, were tested for antibiotic susceptibility using the disk diffusion method. Resistance to colistin, novobiocin, erythromycin and tetracycline was observed in 100% of the isolates. The strains showed intermediate resistance at different levels to kanamycin (1.25%), enrofloxacin (3.75%), neomycin (3.75%), fosfomycin (20%), sulphonamides (86.25%) and nitrofurantoin (90%). Resistance to ciprofloxacin, norfloxacin, gentamicin, polymyxin B, sulphametrim and sulphazotrim was not found. A determinação de produtos eficazes para a desinfecção e que não causem danos ao meio ambiente é um grande desafio para a avicultura orgânica. Neste trabalho foram avaliadas as atividades antibacterianas de quatro desinfetantes: ácido peracético, amônia quaternária, hipoclorito de sódio a 1% e a 0,1% de cloro ativo e do composto de ácidos orgânicos (cítrico, lático e ascórbico), frente às amostras padrão de Escherichia coli, Salmonella enteritidis e Staphylococcus aureus, na presença e ausência de matéria orgânica, sob duas diferentes temperaturas e tempo de contato de 20 minutos. Salmonella enterica is frequently associated with outbreaks of human salmonellosis, and products of avian origin, such as eggs and chicken meat, are the main vehicles of its transmission. The present study describes the occurrence of different serovars of Salmonella enterica and phagotypes of S. enterica serovar Enteritidis in eggs destined for human consumption. Detection of virulence genes in Salmonella Enteritidis isolated from different sources BJM

The presence of three virulence genes, invA, spvR, and spvC, was determined in Salmonella Enteritidis isolated from poultry, pigs, humans and food. All isolates were positive for the invA gene, with 91.2% being positive for spvR and 90.2% for spvC. There was no significant difference in the prevalence of the virulence genes between isolates from different sources. The results indicate that there is a putative high virulence potential for the S. Enteritidis isolates characterized.

Two groups of domestic pigeons (Columba livia) were experimentally infected orally with doses of 9.5 x10(7) and 9.5 x10(9) CFU/mL (group A and B, respectively) of a Salmonella Enteritidis (SE) strain isolated from chickens. None of the used doses caused mortality of the inoculated birds; however, the pathogen was successfully recovered from the liver and spleen of group B birds on day 7 post-inoculation (dpi). Pathogen shedding, as evaluated through cloacal swabs, occurred in both groups until the 14th day of observation (p <0.05). Estudaram-se os efeitos do tratamento de frangos de corte com microbiota cecal anaeróbia liofilizada (MCL) e congelada (MCC) sobre a infecção do trato digestivo das aves por Salmonella enterica sorovar Enteritidis. Foi usada microbiota intestinal sem prévia identificação bacteriana. A infecção foi persistente, em ordem, no ceco, inglúvio e duodeno. A infecção também foi autolimitante nos grupos tratados e no controle. Não ocorreu diferença entre o grupo-controle positivo e os tratados com MCL ou MCC. Effect of evaporated ethyl pyruvate on reducing salmonella enteritidis in raw chicken meat Rev. Bras. Ciênc. Avic.

ABSTRACT In this study, the effect of evaporated ethyl pyruvate (EP) was evaluated for the decontamination of Salmonella Enteritidis on chicken leg meat as a safe alternative to antimicrobial agent. Also, total aerobic mesophilic bacteria (TAMB), Enterobacteriaceae, Escherichia coli and yeast-mold counts samples were investigated. Subsequently, the samples were injected with 0, 42, 105 and 420 mg evaporated EP/L air to the paper filter attached to the container cover and stored at +4 °C for 10 days. ABSTRACT The aim was to investigate the effect of glutamine (Gln) on broilers challenged with Salmonella Enteritidis. 240 1-day-old birds were divided into four groups in a completely randomized design, each of which included 6 replicates with 10 birds per replicate. Group I served as the unchallenged, untreated control (CON). All birds in groups II (SCC) - IV were challenged with 2.0 × 104 CFU/mL of S. Enteritidis. Estudou-se o comportamento da Salmonella Enteritidis quando em contato com a superfície de ovos de consumo, classificados de acordo com a qualidade da casca ou com tratamentos (lavados ou não), usando fezes de aves como veículo de contaminação, e armazenados a 8°C e 70% de umidade relativa ou a 30°C e 90% de umidade relativa. A 8°C, o microrganismo permaneceu viável na superfície dos ovos, ao longo do tempo, enquanto a 30°C foi possível identificar a sua inibição e até sua eliminação da superfície. A contaminação do conteúdo de ovos com defeito de casca foi mais frequente quando os ovos foram submetidos a temperaturas inadequadas de armazenagem (30°C).

ABSTRACT In poultry processing plants, disinfectants are often added to pre-chilling water tanks to reduce microbial contamination. The present study aimed at evaluating the effect of five disinfectants (acidified sodium chlorite, alkyl dimethyl benzyl ammonium chloride, chlorine dioxide, peracetic acid, and sodium hypochlorite) on the populations of food quality indicator microorganisms and on Salmonella Enteritidis (SE) in the presence and absence of organic matter. Hemagglutinating properties of Salmonella enterica serovar Enteritidis isolated from different sources BJM

Twenty-five strains of Salmonella enterica serovar Enteritidis isolated from different sources were examined for hemagglutinating activity. Bacteria cultured in different media induced hemagglutination of human erythrocytes, but no reaction was observed with erythrocytes from other animal species. The hemagglutinating expression activity was better for cultures on CFA agar at 37ºC than other conditions examined. The hemagglutination was inhibited by D-mannose, D-mannitol, melibiose, D-raffinose, L-rhamnose and sucrose. Avaliou-se a infecção experimental por Salmonella Enteritidis fagotipo 4 (SEpt4) em embriões de frango de corte para averiguar a habilidade de penetração através da casca e o efeito da inoculação no albúmen, considerando-se a mortalidade, a eclodibilidade e a colonização intestinal dos pintos eclodidos. Foram realizados dois experimentos, distribuídos em quatro tratamentos (T) cada, com 200 e 194 ovos incubáveis das linhagens Ross e ISA Label, respectivamente. Utilizaram-se ovos não sanitizados e inoculados na casca com Salmonella Enteritidis (T1) ou com placebo (T2); ou inoculados no albúmen com Salmonella Enteritidis (T3) ou com placebo (T4).
